Why do writers refer to someone's writing as "a piece" of writing?
I don't know why, but "nice piece" has always seemed so weirdly dirty to me, when I hear people say that about someone's writing. Why do we call someone's writing "a piece" of writing?

Because writing is an art, and such writing that writers do are an artefact that we can analyse and appreciate over time for years and years. For that reason, we call it a piece of writing. A good analogy to give is an album you buy from a music store. The music is the writing, and the physical casing is the piece, given cover art, and designed for the benefit of reaching out to people.
